4 Thick Pork Chops
(make sure the chops has pockets for stuffing)
1 Coarsely Crumbled Saltine Cracker
2 tsp. Parsley Flakes
1 tsp. Minced Onion
1 8oz. Sliced Mushrooms
Preheat oven at 350 degrees. Sprinkle the inside of
the chops pockets with salt. Combine the cracker
crumbs, parsley, and onions. Drain the mushrooms
(but save
the juice). Add the mushrooms to crumb
mixture
and toss to blend.
Spoon stuffing into pocket.
Place in small casserole dish.
Pour mushroom
juice around chops. Cover and bake in the
preheated oven for 1 hour. Then uncover and continue
to bake for 10 to 15 minutes or until golden brown.
